a firm cheese made from cow's milk.
Type: 1. Origin — This variety of cheese was created in Canada to resemble the Italian Montasio cheese. The Montasio name can only be used for cheese made in Italy, so the Canadian version is named after the Italian region of Friuli-Venezia Giulia where Montasio cheese is made. The cheese has a light-brown rind and is known for its nutty flavour. The name occurs most frequently in Canada (see Chart 1).
